The foods that help a fatty liver are coffee, oily fish, leafy greens, beans and lentils, whole grains, nuts and seeds, garlic, olive oil, turmeric and bitter vegetables. The foods that build one are sugar-sweetened drinks, fruit juice, refined flour, fried food and alcohol.
That is the short version, and it is genuinely most of the answer. Fatty liver is the one common chronic condition where diet is not supportive care — it is the treatment.
Ayurveda would add a second layer that changes how you apply the list. It is not only what you eat but whether your digestion can process it, and which of the six tastes your plate is missing. In almost every case of fatty liver we see, the missing taste is bitter.
Why Food Is the Main Lever
The liver is the organ that processes everything absorbed from the gut. Feed it a steady stream of fructose and refined carbohydrate and it converts the surplus into fat and stores it in place. Reduce that input and it clears the fat again, because liver fat is metabolically active and mobilises faster than fat anywhere else in the body.
In Ayurvedic terms, fatty liver is kapha and meda (fat tissue) accumulating in a pitta organ, on the back of weak agni producing ama — undigested residue the liver has to deal with. The corrective direction is therefore lightening, drying, bitter and warm. Heavy, sweet, cold, oily and sour foods push the other way.

The Fructose Point Deserves Emphasis
Not all sugar behaves the same way in the liver. Glucose is used all over the body; fructose is processed almost entirely in the liver, and in excess it is converted to fat right there. That is why sweetened drinks are worse for a fatty liver than an equivalent number of calories from rice.
Whole fruit is a different matter — the fibre slows absorption and the quantities are self-limiting. Two servings of whole fruit a day is fine. A large glass of orange juice is not.

Weeks 3–6: Add the Correctives

Weeks 7–12: Build Muscle and Consolidate

Get medical assessment rather than dietary advice if you have jaundice, abdominal swelling, vomiting blood, black stools, confusion, or severe right-sided pain. These indicate advanced liver disease, not a diet problem.
